The coals are lit. Why do I have to wait?

This is where most first-timers make their biggest mistake: they cook too early. Charcoal goes through stages. Throw food on too soon and you'll scorch the outside while the inside stays raw. Wait for the right moment and you've got magic. Let's learn to read it.

Too Early โ€” Don't Cook Yet

You've got active flames shooting up from the coals. Looks exciting โ€” and dangerous to cook on. The coals aren't at their hottest yet and you'll get uneven, flare-up-prone cooking.

โฐ Time since lighting: 5โ€“10 minutes
๐Ÿคš The Hand Test: Hold your palm 5 inches above the grate. If you can hold it there for 2โ€“3 seconds before pulling away โ€” that's high heat. 4โ€“5 seconds = medium heat. That's your quick field test without a thermometer.

Not all heat is the same

Once your coals are ready, you can control how hot the grill gets by how you arrange them and how you use your vents (more on vents in Module 3). Here's a quick map:
